If I had to guess, I would say most of you are big Chipotle fans. I mean, there have been several times in my life where I ate a Chipotle Burrito Bowl 2-3 times per week. It’s “healthy,” filling and delicious - how can you go wrong??

With this recipe, I’ve found a super simple way to do what we like to call “taco bowls” at home (don’t ask me what the difference is between a taco bowl and a burrito bowl - I simply do not know the answer).

You may use any meat, veggie or bean base that you like, but in today’s recipe we used the Easy slow cooker shredded chicken recipe that we posted back in March of 2021. Add some rice, cheese and your favorite toppings and you have a super easy meal that can be adjusted to fit your individual nutrition plan.

Need more fats? Add cheese, sour cream, avocado, or use fattier meat varieties like pork and beef. Need more carbs? Up the rice and veggies. Simply need to feel fuller? Add some extra meat, vegetables or beans. You could do a new variation every week and never get bored!

Ingredients

  • 20 oz Easy slow cooker shredded chicken (already cooked)

  • 2 cups cooked white rice

  • 4 oz shredded taco cheese

  • 4 Tbsp light sour cream

  • 1 avocado

  • 2 cups chopped lettuce

  • 1/2 cup corn salsa

  • Taco sauce of choice

Instructions

  1. Using a slow cooker, prepare the Easy slow cooker shredded chicken according to the recipe, and you can even get creative with different herbs and spices. I usually start it at about 1 or 2 in the afternoon, depending on dinner time. You may also prepare ahead of time and reheat for your meals.

  2. Prepare your rice according to package directions. I use a rice cooker.

  3. Chop lettuce and prepare avocado. Line up all your toppings!

  4. For a single serving:

    • 1/2 cup cooked rice

    • 5 oz shredded chicken

    • 1 oz shredded taco cheese

    • 1 Tbsp light sour cream

    • 1/4 avocado

    • 1/2 cup chopped lettuce

    • 2 Tbsp corn salsa

    • drizzle with taco sauce

*This makes a great lunch that you can prepare ahead of time! Measure the rice, chicken and cheese and place in individual containers. Store toppings separately and combine at lunch time :)
